INGREDIENTS:
  • Aloo / Potatoes - 4 medium
  • salt - 2 tsp

RECIPE STEPS:

  9. Transfer the potatoes in a large mixing bowl and add corn flour, give it a good mix and coat each potato shred is well coated. Add salt as well and mix.

  10. In a large frying pan, pour oil and then place 3 equal portions of the potato roasties, shallow fry them over medium flame for 2 minutes. Adjust the shapes as needed.

  1. Place 2-3 potato roasties on a leaf bowl. Add sweet dahi, imli chutney and green chutney on top.

RECIPE NOTES :

Notes: Removing starch from the potatoes is necessary, if there is too much starch then the potatoes won’t be crispy. You can make the potatoes roastie without boiling the potatoes, you can directly shallow fry it. Boiling the potatoes will make it crispier and fluffier. To make the sweet dahi, add 2-3 tbsp of sugar to 1 cup of sugar. Tips: You can use a flat tava as well to shallow fry, but using a frying pan it will avoid too much splatter of the oil.
