INGREDIENTS:
For the batter
  • Besan / Gram Flour - 1 cup
  • Maida / Plain Flour - 1/4 cup
  • Salt - to taste
  • Baking Powder - 1 tsp
  • Water - as required for the batter
For the masala mixture
  • Oil - 2 tbsp
  • Green Chili - 2 small finely chopped
  • Ginger - 1 inch finely chopped
  • Onion - 2 large finely chopped
  • Salt - 1/2 tsp or to taste
  • Turmeric Powder - 1/2 tsp
  • Fresh Coriander - 2-3 tbsp chopped
  • Coriander Powder - 1/2 tsp
  • Red Chili Powder - 1/2 tsp
  • Garam Masala - 1/4 tsp or chat masala or chana masala as per preference
  • Tomato - 1 med roughly chopped
  • Fresh Coriander - 2-3 tbsp finely chopped
RECIPE STEPS:
  1. In a large mixing bowl combine, besan, baking powder, maida and salt. Stir everything well.

  3. In a non-stick pan, heat the oil on medium flame. Add green chilies and ginger Fry for 2 minutes on medium flame. Stir using a metal flat spoon.

RECIPE NOTES :

Notes: Baking powder and maida will make the bhurji light and fluffy. If you want to make this healthy then you can also add some soya flour.
