INGREDIENTS:
For the Rice
  • Basmati Rice - 2 cup

  • Kabuli Chana - 1 cup boiled or frozen
  • Soya Chunks - 1/2 cup soaked
  • Olive oil - 1 tbsp Saffola aura
  • Kashmiri Red Chili Powder - 1 tsp
  • Biryani masala - 1/2 tbsp or 1/2 tsp Garam masala
  • Turmeric powder - 1/4 tsp
  • Salt - to taste
  • Ginger Garlic Paste - 1 tsp
  • Green Chili - 2-3 small cut long
  • Chopped Fresh Mint & Coriander Leaves - 2 tbsp Or Mint Chutney
  • Birista/Fried Onion - 2 tbsp or 1/2 tsp Sugar
  • Green Cardamom - 2-3 small
  • Cinnamon sticks - 2 small
  • Black Peppercorns - 1 tsp
  • Yogurt / Dahi - 4 tbsp
  • Water - 3 1/2 cup

  • fresh coriander leaves - 1 tbsp chopped
  • Birista/Fried Onion - 1 tbsp
RECIPE STEPS:
  1. Soak the rice in water for 20 minutes. The water level should be atleast 1 inch above the rice.

  1. In a large pot, add boiled kabuli chana, soya chunks, birista, dahi, Kashmiri red chili powder, salt, cinnamon sticks, green cardamom, black peppercorn, turmeric powder, green chilies, biryani masala, ginger garlic paste and chopped coriander and mint leaves.

  2. Stir everything until well combined. Finally add the olive oil and stir. Set aside.

  1. Check the rice; it has to double in volume. Drain the water before we cook it.

  3. Cover the pot and over high heat, cook the rice for 5 minutes or until it comes to a boil.

  5. Use the back of a spoon and peek in the rice, if it’s dry inside then the Biryani is done, if you see water then continue cooking for few more minutes.

RECIPE NOTES :

Notes: Soya chunks are high in protein, but you can skip the soya chunks and add extra boiled kabuli chana if you do not prefer them. If Birista (fried onions) is not in handy then you can use sugar. If using Garam Masala instead of Biryani Masala, add only 1/2 tsp. Adjust the green chili or omit it if you want to avoid spicy flavor. The Saffola Aura Olive Oil used in the video - Is a blend of Spanish olive oil and Flax seeds oil. It has a rich flavor profile and is full of antioxidant and detoxifying agents.
