INGREDIENTS:
For Herbal Green Tea
  • Water - 1 cup
  • Black Pepper Powder - 1 pinch or white pepper powder
  • Cardamom Powder - 1 pinch or crushed whole cardamom seeds
  • Mint leaves - 15-20 medium
  • Tulsi / Indian Basil leaves - 15-20 medium
  • Lemon Juice - 1/2 tsp
  • Honey - 1 tsp or Sugar, optional
For Chocolate Tea
  • Water - 1/4 cup
  • Milk - 1 cup
  • Tea Leaves - 3/4 tsp
  • Sugar - 2 tsp
  • Cocoa Powder - 3/4 tsp
For Tandoori Tea
  • Kulhad / Clay Bowl - 1 small
  • Water - 1/4 cup
  • Milk - 1 cup
  • Tea - 1 tsp
  • Sugar - 2 tsp
  • Ginger - 1/2 inch grated
For Honey Tea
  • Water - 1 cup
  • Tea Leaves - 1/2 tsp
  • Sugar - 1/2 tsp
  • Lemon Juice - 1 tsp
  • Honey - 1 1/2 tsp
For Ice Tea
  • Water - 1 cup
  • Sugar - 2 tsp
  • Tea Leaves - 1 tsp
  • Ice - as required
RECIPE STEPS:

  1. In a sauce pan, pour water and add black pepper and cardamom powder. Bring the water to a boil.

  2. Once the water comes to a rapid boil, turn off the flame; add the mint leaves and tulsi leaves. Give it a stir and cover the pan and set aside for 2 minutes.

  3. Before serving, add lemon juice and stir.

  1. In a pan, pour water and milk, add tea leaves and sugar. Bring the water to a simmer.

  2. Once the water comes to a simmer, add the cocoa powder, give it a stir and cook for 2 minutes, bring it to a boil, turn off the flame.

  3. Pour the Chocolate tea in a serving cup using a strainer. Serve the Chocolate tea anytime.

For Tandoori Tea
  1. Heat a Kulhad, until it’s charred over high heat, you can use a tandoor as well. The tandoor will bring out the charcoal flavour in the tea even better.

  2. In a pan pour water and milk, add tea leaves, sugar and grated ginger. Over high heat bring the tea to a boil.

  3. Once the tea comes to a rapid boil, lower the flame; and cook for further 2-3 minutes. Set aside once done.

  4. For making the Tandoori tea - place the Kulhad inside a deep vessel, pour the prepared tea in the kulhad, you will see an eruption, and the tea will over flow in the vessel. Empty the tea in the vessel and remove the Kulhad.

  1. In a sauce pan, pour water, add tea leaves and sugar. Adding sugar at this stage will bring out a great colour to the tea. Bring it to a boil over medium flame.

RECIPE NOTES :

Notes: Adjust sugar or honey to your taste, in all your teas. The quantity of cocoa powder depends on the quality of cocoa powder used. If your cocoa powder is strong then use only ¼ tsp. Please don’t mistaken Chocolate tea to hot chocolate; we are using tea leaves, so you would definitely get tea flavour. You can add Chai Masala in the Tandoor tea, for a unique flavour. Tips: Traditional earthen Kulhad are made with mud or clay, you can easily purchase it in the local market.
