Why not give homemade healthy biscuit a chance and make something chemical free by using regular staples at home to make an equally tasty, nutritional and quick biscuit. Today’s recipe is just that, homemade Atta Biscuit. Make a soft dough using atta and little bit of maida, shape the biscuit using a biscuit maker and bake in an oven or a cooker until crispy and crunchy. Serve it with hot cup of tea and enjoy!

INGREDIENTS:
- Ghee - 60 gms ¼ cup, room temperature
- Powdered Sugar - 90 gms
- Atta - 150 gms
- baking powder - 3/4 tsp
- Maida - 15 gms optional
- Milk - 60 gms
RECIPE STEPS:
For the biscuit dough
- In a large plate place the ghee followed by the sugar. Using your hand, start to mix both the ingredients until the color turns from yellow to cream in color.
- Once done add the baking powder, half of the atta and maida. Using your hand, start to mix all the ingredients until well incorporated.
- Pour little milk at a time and start mixing, after few minutes add the remaining atta and the give it a final mix and make soft dough out of this mixture. Use milk as required.
For shaping the biscuit
- Prepare idli tray and line the baking tray with parchment paper.
- You can shape the biscuit into round flat balls or you can use a biscuit maker also known as chakli maker to shape the biscuit. Kindly use the ridged blade to shape the biscuit.
- Once the dough is ready divide the dough and then take one portion of the dough and shape it into a log shape and fill it into the biscuit maker mould. Tighten the lid.
- Start by pressing the biscuit maker upside down, press and then remove the biscuit and place it on the baking tray.
- If baking in an idli tray do not apply any butter or ghee, just simply place the biscuit on the tray.
For making the biscuit in cooker
- Preheat a cooker over medium high heat, spread the salt evenly and place a round ring in the center. This will elevate the height and avoid the biscuit from burning.
- Place the lid without the gasket or whistle, preheat the cooker for 10 minutes over high flame.
- After 10 minutes, place the idli tray inside the cooker and then bake the biscuit for 15 minutes over low flame.
- After 15 minutes the biscuits will be ready. Remove from tray and place the biscuit on a cooling rack to cool.
For making the biscuit in oven
- Preheat the oven at 150°C for 10 minutes. Place the tray inside the preheated oven, lower the temperature to 150°C and bake the cookies for 20-25 minutes.
- Finally our biscuits are ready, remove from the oven and allow the biscuits to cool on a cooling rack.
- The texture of the biscuit should be light and crunchy.
Serve
- Serve the sinfully delicious Atta Biscuit at tea time with hot cup of tea.
RECIPE NOTES :
Notes: Do not use icing sugar for this recipe; just grind some regular sugar in a mixie. You can use a hand blender if you prefer. Adding maida makes the cookies lighter and tastier. Both ways of baking are the same, just the baking time, temperature and the shape is a little different. Tips: Use a big cooker which has height and which can accommodate the size of your idli tray this will ensure even cooking and the biscuit get the brown colour on top. You can use a wire stand or a katori to elevate the height. You can use butter paper or parchment paper to line the baking trays.
