What if we tell you that we can make the traditional and classic dish with a little bit of our own Indian twist then would you belief…Well then watch and learn. The Italian style is very summery and fresh and the Indian style is more bread pizza inspired. Nevertheless both styles will tempt you to make them at every party and get together. Prepare a fresh topping with tomatoes, onions and fresh basil, char one tomato for the smoky flavor and then toss everything with a slight drizzle of extra virgin olive oil. Prepare the Baguette slices by brushing olive oil; grilling it and then rubbing the slices with garlic…a very important step do not skip it. INGREDIENTS:
For the indo - Italian style
- Baguette - 6 slices
- olive oil - to brush on bread
- garlic - 2 pods to rub on bread
- Tomatoes - 2 medium one grilled and one raw
- Onion - 1 medium finely chopped
- Fresh Basil - 4-5 leaves
- Pepper - to taste
- Fresh Coriander - 1 tsp finely chopped
- Basil / Coriander - for garnish
For Indian style
- Baguette - 6 slices
- Tomatoes - 6 slices
- Onion - 6 slices
- Green Chilli - 2 small finely slit
- garlic - 2 pods to rub on bread
- Cheese - 1/3 cup grated
- salt - to taste
RECIPE STEPS:
For the topping of Indo Italian style
- Start by dicing one tomato and finely chopping one onion. Roll some fresh basil leaves together and then finely chop them as well.
- Transfer everything in a large mixing bowl set aside.
- Make a cross cut on the second tomatoes from top, do not cut all the way through. Brush some olive oil on the tomatoes.
- Place the tomato, over a grill rack directly over the flame. Grill and char the tomatoes, until you see black spots.
- Once done place the tomatoes in ice cold water. After some time peel of the charred skin from the tomatoes and dice the tomatoes and add it to the mixing bowl.
- Add fresh chopped coriander leaves followed by salt and pepper to taste and some extra virgin olive oil.
- Stir everything and set aside for 10-15 minutes or until needed.
For preparing the bread
- Slice the baguette into ½ inch, diagonally cut slices.
- Once done brush olive oil on both sides of the bread and if using a spoon then ½ teaspoon per slice.
- Place the bread slice over the tandoor grill rack directly over low flame. Keep turning the bread slices.
- Once you see the grill marks on the bread, remove and then rub garlic over the bread slices. Similarly repeat this step for the remaining bread slices.
- Place a good dollop of the topping on top of each prepared bread slices. Garnish with fresh chopped basil and your Bruschetta is ready to serve.
For the topping of Indian style
- Place the bread slice over the tandoor grill rack directly over low flame. Keep turning the bread slices.
- Once you see the grill marks on the bread, remove and then rub garlic over the bread slices. Similarly repeat this step for the remaining bread slices.
- Place a bread slices on a baking tray and then place slices of tomato, onions, green chilies and basil
- Finally top it with some grated cheese and bake in a preheated oven at 200°C for 7-8 minutes.
- Once done sprinkle some chopped coriander or basil and the Indian style bruschetta is ready to serve.
Serve
- Serve these bruschetta at a party or get together, both the versions will make your guests happy.
RECIPE NOTES :
Notes: Grilling the tomatoes will enhance the flavour for the topping. Flipping n turning the bread slices is essential. Rubbing garlic is important, because the bread will soak all the flavour of the garlic and you would get the garlic flavour without even eating chopped garlic. For the Indian style you can add some sweet corn and jalapenos if you like.
