I am sure all the vegetarian lovers would wish if there was a recipe similar to that, well don’t look any further. Here is a recipe made plainly with besan and maida, cooked with lots of aromatic masala and spices and scrambled. And voila what do you get Eggless Bhurji homemade. Try making it and Enjoy!!!
INGREDIENTS:
For the batter
- Besan / Gram Flour - 1 cup
- Maida / Plain Flour - 1/4 cup
- Salt - to taste
- Baking Powder - 1 tsp
- Water - as required for the batter
For the masala mixture
- Oil - 2 tbsp
- Green Chili - 2 small finely chopped
- Ginger - 1 inch finely chopped
- Onion - 2 large finely chopped
- Salt - 1/2 tsp or to taste
- Turmeric Powder - 1/2 tsp
- Fresh Coriander - 2-3 tbsp chopped
- Coriander Powder - 1/2 tsp
- Red Chili Powder - 1/2 tsp
- Garam Masala - 1/4 tsp or chat masala or chana masala as per preference
- Tomato - 1 med roughly chopped
- Fresh Coriander - 2-3 tbsp finely chopped
RECIPE STEPS:
- In a large mixing bowl combine, besan, baking powder, maida and salt. Stir everything well.
- Add little water at a time to make a thin batter, once done set aside.
- In a non-stick pan, heat the oil on medium flame. Add green chilies and ginger Fry for 2 minutes on medium flame. Stir using a metal flat spoon.
- Then add onions, cook everything for 1 minute.
- Add salt, turmeric powder and fresh coriander, cook for 2-3 minutes.
- Now add coriander powder, chili powder and finally garam masala, cook for 3-4 minutes over low flame.
- Next add the tomato and cook for further 4-5 minutes.
- Once done add the entire besan batter to the masala mixture, move the pan so that the entire pan is covered with the batter.
- Sprinkle some fresh coriander and then continue to cook over low flame for 1 minute.
- Using a flat metal spoon or a spatula, start breaking the omelette so that it dries up faster. Cook for 2-3 minute.
- You can also flip the omelette or cover the pan and cook until it’s dry.
- After 2-3 minutes of cooking, start breaking the omelette using the metal flat spoon this will take you 3-4 minutes.
- Once done sprinkle some more fresh coriander and our Eggless Bhurji is ready.
serve
- Serve Eggless Bhurji hot at breakfast.
RECIPE NOTES :
Notes: Baking powder and maida will make the bhurji light and fluffy. If you want to make this healthy then you can also add some soya flour.
