However strange it may sound, but trust me every household has noodles in their kitchen pantry, then why just restrict it to making Chinese cuisine. Make a delicious vegetable filling with your choice of veggies then toss in some spicy pasta sauce. Then build layers of al dente noodles, vegetable filling and cheese. INGREDIENTS:
For the noodles
  • Water - 1.5 litre to boil the noodles
  • salt - 1 tsp
  • Hakka Noodles - 1 packet 180 gms

  • oil - 1 tbsp or olive oil
  • garlic - 2 tbsp finely chopped
  • Chili Garlic sauce - 2 tbsp or Sriracha
  • Onion - 2 small diced
  • Carrot - 1 small diced
  • salt - to taste
  • French Beans - 6-7 small chopped
  • Corn - 1/4 cup
  • Capsicum - 1 small diced
  • Pasta & Pizza sauce - 2-3 tbsp
  • Black Pepper - 1/2 tsp optional
  • Coriander Leaves - 2 tbsp finely chopped
  • Water - 1/4 cup to make it saucy
  • Mozzarella Cheese - 1 cup grated

  • Fresh Herbs - coriander or parsley, as required

  1. In a large vessel, pour water, cover the pan and bring it to a boil.

  5. Once mixed add the black pepper and coriander leaves for freshness, followed by water to make it saucy. The sauce is ready. Set aside.

  1. In a small pan, add oil and place a layer of noodles as required, drizzle some more oil.

  2. Then add a layer if the vegetable filling, sprinkle a generous amount of grated mozzarella cheese. Repeat the process; you should be getting two layers of each item.

  3. If you have some remaining noodles and sauce, then mix the extra noodles with the sauce add some fresh coriander leaves and some more pizza sauce if you wish. Stir everything and put it on top of the cheese layer.

RECIPE NOTES :

Notes: Al dente means, do not cook the noodles all the way through. You can use any red chili sauce that is spicy. You can use white sauce for this recipe; you can alternate the red and white sauce.
