Instructions
  1. Peel and dice the potatoes, size depends on your preference.
  2. In a large mixing bowl combine, potatoes, onions, cucumber, green chili and lemon juice.
  3. Next add white and black salt, coriander leaves and stems and crushed timur or Sichuan peppers, set aside.
  4. In a pan roast the sesame seeds, once they start to pop, blend the sesame seeds in a blender until coarse consistency.
  5. Add the sesame seeds to the potatoes, start mixing all the ingredients the potatoes have to be well coated. You can add some whole roasted sesame seeds as well.
  6. In a tadka pan pour mustard oil and once the oil is hot add the fenugreek seeds allow it to turn golden. Add them to the potatoes and give it a good mix.
  7. Add water and red chili flakes to adjust the consistency. Aloo Ko Achar is ready.
Serve
  1. Serve as a starter or as achar along with you meal.
Recipe Notes

Notes:

  • The key ingredients for this recipe are Timur, if it’s unavailable then add Sichuan pepper or Black peppercorn. You can crush the peppercorns using a motor and a pestle.
  • You can use black or white sesame seeds.
  • The mustard oil has to be smoky.
  • Adding water it will mellow down the pungent flavor.

Tips:

  • We cannot make big batch of this achar, shelf life is 2-3 days only.
