Instructions
  1. Peel the potatoes; in large bowl pour 2 cups of water and the start shredding the potatoes in them by using a grater.
  2. Transfer the shredded potatoes in another large bowl. Squeeze out the excess water.
  3. Pour some more water, and give it a stir. Leave the potatoes aside for 2 minutes.
  4. After 2 minutes the water will turn cloudy and the potatoes will become crispy. Transfer the shredded potatoes in a deep vessel. Squeeze out the excess water.
  5. Add some more fresh water into the vessel and then over medium flame heat it up.
  6. Add 2 tsp of salt, stir and allow the potatoes to simmer for 5 minutes. This process will remove all the excess starch from the potatoes.
  7. Once done strain the potatoes, using a perforated spoon remove the potatoes and place it on a kitchen towel.
  8. Pat the potatoes dry or even squeeze the cloth to remove all excess water.
  9. Transfer the potatoes in a large mixing bowl and add corn flour, give it a good mix and coat each potato shred is well coated. Add salt as well and mix.
  10. In a large frying pan, pour oil and then place 3 equal portions of the potato roasties, shallow fry them over medium flame for 2 minutes. Adjust the shapes as needed.
  11. After 2 minutes flip them and cook over medium flame for further 2 minutes or until golden on both sides. It will take 4-5 minutes for each batch.
  12. Once done remove the potato roasties on a paper towel. Set aside.
For assembling and making the chat
  1. Place 2-3 potato roasties on a leaf bowl. Add sweet dahi, imli chutney and green chutney on top.
  2. Next sprinkle some chat masala and then top it with nylon sev. Garnish with juliennes of carrots or beetroot.
Serve
  1. Serve the Aloo Roastie Chat at your upcoming get together.
Recipe Notes

Notes:

  • Removing starch from the potatoes is necessary, if there is too much starch then the potatoes won’t be crispy.
  • You can make the potatoes roastie without boiling the potatoes, you can directly shallow fry it. Boiling the potatoes will make it crispier and fluffier.
  • To make the sweet dahi, add 2-3 tbsp of sugar to 1 cup of sugar.

Tips:

  • You can use a flat tava as well to shallow fry, but using a frying pan it will avoid too much splatter of the oil.
