Recipe Notes

Notes:

  • Eno is used for instant fermentation and for making the batter crispy.
  • Making the batter thick in the beginning and then thinning it down prevents lump formation.
  • Bring the temperature down of the tava, will ensure that the dosa can stick to the tava really well.
  • You can use ghee instead of oil.
  • You can sprinkle some gun powder or some podi masala.
  • If you cook over low flame then the dosa will be crispy and crunchy, if you cook over high flame then it would be soft. Medium flame is ideal for a perfect dosa.
