Today’s recipe is an easy to adapt to whatever you and your family like, be it pasta, lasagna sheets or Noodle. Yes you heard it right, we are making Noodles Lasagna. However strange it may sound, but trust me every household has noodles in their kitchen pantry, then why just restrict it to making Chinese cuisine. Make a delicious vegetable filling with your choice of veggies then toss in some spicy pasta sauce. Then build layers of al dente noodles, vegetable filling and cheese. Cover the pan and cook it over the stove and there you have it…Vegetable Lasagna made from scratch. Twisted version that actually tastes like REAL lasagna! ?. This recipe does not disappoint! The kids will LOVE it too!

Ingredients
For the noodles
For the vegetable filling

Instructions
  1. In a large vessel, pour water, cover the pan and bring it to a boil.
  2. Once the water comes to a rapid boil, add salt, followed by the noodles boil the noodles.
  3. The noodles have to be al dente and should have a bite to it, after 2-3 minutes, eat one noodle and check.
  4. Once done, strain the noodles and then add fresh cold water, this will stop the noodles from cooking any further. Set aside.
For the vegetable filling
  1. In a pan add oil, once mildly hot add the garlic and chili garlic sauce. Continuously stir and cook for 2 minute over high heat.
  2. Add the onions, carrots and salt, give it a stir and cook for 2 minutes over medium flame.
  3. Once done add beans, corn and capsicum. Stir and cover the pan and cook for further 3-4 minutes.
  4. Add the pasta and pizza sauce, stir and cook for 1 more minute.
  5. Once mixed add the black pepper and coriander leaves for freshness, followed by water to make it saucy. The sauce is ready. Set aside.
For assembling the lasagna
  1. In a small pan, add oil and place a layer of noodles as required, drizzle some more oil.
  2. Then add a layer if the vegetable filling, sprinkle a generous amount of grated mozzarella cheese. Repeat the process; you should be getting two layers of each item.
  3. If you have some remaining noodles and sauce, then mix the extra noodles with the sauce add some fresh coriander leaves and some more pizza sauce if you wish. Stir everything and put it on top of the cheese layer.
  4. Quickly cover the pan and cook the lasagna for 20 minutes over medium to low flame.
  5. After 20 minutes, the cheese will melt, vegetables will be cooked and the bottom most layer will get crunchy.
Serve
  1. Sprinkle some coriander. Serve the Noodles Lasagna hot.
Recipe Notes

Notes:

  • Al dente means, do not cook the noodles all the way through.
  • You can use any red chili sauce that is spicy.
  • You can use white sauce for this recipe; you can alternate the red and white sauce.
