For the bread dough
  1. In a large mixing bowl combine lukewarm water, sugar, yeast, milk powder, maida and salt. Stir until all the ingredients until well combined. Mix all the ingredients until you form dough.
  2. Transfer the dough onto a mixing plate; continue to knead the dough along with the butter for 10 minutes.
  3. Grease a mixing bowl with butter and transfer the dough in the mixing bowl and cover with a damp cloth, keep it aside for 1 hour to rise or until its doubles in volume.
  4. In the meantime, using butter grease a cake tin which is 5.5 inch in diameter. Set aside.
  5. After an hour the dough will be double in size. Remove the dough and puncture it.
  6. Using your hands gently shape the dough to form a round shape, similar to the dimensions of the cake tin, ensure the dough is smooth and crack free.
  7. Place the rolled dough in the cake tin and using your fingers spread the dough to form the tin shape.
  8. Cover the cake tin with a damp cloth. Keep the dough aside for 1 hour or until they double in size.
For the bread
  1. After 45 minutes, start preheating a cooker, spread the salt evenly and place a round ring stand in the center. This will elevate the height and avoid the bread from burning.
  2. Place the lid without the gasket or whistle, preheat the cooker for 15 minutes over high flame.
  3. After an hour brush the bread with milk.
  4. Place the bread in the preheated cooker, place the lid and bake the bread on medium heat for 15 - 18 minutes.
  5. After 13 minute open the lid and if the colour is very light then brush some butter on the bread. This will give it a good colour. Quickly cover and bake it for the remaining time.
  6. After 18 minutes remove the bread using gloves and place it over a cooling rack.
  7. Brush the bread with butter and cover the bread with a damp cloth for another 1 hour.
For the garlic butter oil
  1. In a preheated pan add the butter and olive oil; also add mixed herbs and chili flakes.
  2. Finally add some salt and chopped garlic. Over medium flame bring it to boil. Once it comes to a boil, lower the flame and continue to cook for 2 more minutes.
  3. Turn off the flame and add the chopped parsley or coriander. Give it a good stir and our garlic butter is ready.
For assembling
  1. After 1 hour the bread will be soft and spongy. Place it on a wooden board and start slicing the bread using a serrated knife also known as bread knife.
  2. Make vertical slices 1 inch or ¾ inch apart.
  3. Next slice the bread diagonally so that you get fancy diamond cuts. Slices same 1 inch or ¾ inch apart. Ensure you should not be cutting the bread completely through, just about ¾ away.
  4. Once done drench the bread vertically and diagonally with the garlic oil, add the garlic and herbs as well. It should take about 2-3 minutes.
  5. Stuff the bread vertically and diagonally with mozzarella cheese, adjust the cheese quantity as per your liking.
  6. Sprinkle some chopped coriander or parsley and drizzle some more of the garlic butter oil.
For baking the garlic bread
  1. Once done place the garlic bread inside a round cake tin, which is would fit inside your cooker and which is lined with parchment paper.
  2. Preheat the cooker prior to baking, place the cake tin in the preheated cooker. Close the lid, without whistle and gasket.
  3. Bake the garlic bread over medium high heat for 7-8 minutes. The baking timing depends on the flame. You can check after 5 minutes.
  4. After 8 minutes, remove the cake tin and place it over a cooling rack to cool.
  5. Our cheese pull apart garlic bread is ready. Remove and place it on a serving plate.
serve
  1. Sprinkle some more chopped coriander or parsley and chilli flakes. Serve the hot pull apart garlic bread immediately.
Recipe Notes

Notes:

  • You can use any burger bun or uncut bread, if you do not wish to make the bread from scratch.
  • Use a cooker which has height and which can accommodate the size of your cake tin. This will ensure even cooking.
  • If you do not have a round ring you can use a wired stand, katori, cookie cutter or a bowl to elevate the height.
  • If you do not have mixed herbs then you can use oregano and basil.
  • Use a serrated knife to slice the bread, do to not use the regular knife.
  • You can use cheese slices if you like.
  • Keep the excess garlic butter oil for making garlic bread at home.

Tips:

  • Brushing the bread with milk, will ensure that you get the brown colour on top.
