INGREDIENTS:
For the vegetable filling
- Mixed Vegetables - 2 cups cauliflower, carrot, capsicum,beans,paneer,green chili
- oil - 1 tbsp
- Cumin Powder - 1/2 tsp
- Red Chili Powder - 1/2 tsp
- Chat Masala - 1 tsp
- salt - 1 tsp
For the macaroni
- Water - 6 cups to boil the macaroni
- salt - 1 tsp
- Macaroni - 1 1/2 cup
For the sauce
- oil - 2 tbsp
- garlic - 3-4 cloves finely chopped
- Green Chili - 1 small finely chopped
- Coriander - 1 tbsp finely chopped
- Onion - 1 medium pureed
- Sliced Tomatoes - 4 medium pureed
- salt - 1 tsp
- Sugar - 1 tsp
- Red Chili Powder - 1/2 tsp
- Chat Masala - 1 tsp
- Cumin Powder - 1/2 tsp
- Ketchup - 1 tbsp
- Water - 1/2 cup
RECIPE STEPS:
For the vegetable filling
- In a mixer grinder jar, place all the mixed vegetables and blend everything to a smooth paste like consistency. Do not add any water, you can cut the vegetables finely or even grate it.
- In a preheated pan, pour oil and then add the vegetable paste. Cook the vegetables for 2 minutes.
- Add cumin powder, red chili powder, chat masala and salt. Give everything a good mix and continue to cook the vegetables for 3-4 minutes.
- Once done, turn off the heat and allow the vegetable mixture to cool down.
For the macaroni
- In a large vessel, pour water and bring it to a boil, add salt and add the macaroni. Boil the macaroni for 8-10 minutes. Kindly follow the package instructions.
- The macaroni has to be al dente and should hold its shape, strain the macaroni and set aside.
- In a piping bag fill the cooked vegetable and then stuff each macaroni with the filling, this should take about 10 - 12 minutes.
For the sauce and making
- In a pan add oil, once hot add the garlic, green chili, chopped coriander and cook for 1 minute.
- Finally add the pureed tomatoes and onions, give it a stir and then add the salt. Cook for 4-5 minutes.
- Once the puree becomes half in volume, add the sugar, red chili powder, chat masala and cumin powder. Stir and cook for further 3-4 minutes.
- Add the ketchup and cook for 1 more minute, pour water and bring it to a boil. The sauce is ready.
- Add the stuffed macaroni and give everything a good stir or until all the macaroni is well coated with the sauce.
serve
- Sprinkle some coriander or fresh oregano. Serve the stuffed macaroni hot.
RECIPE NOTES :
Notes: If you want to give this recipe Italian taste then you can skip the Indian spices and add oregano, basil and chili flakes, instead of cumin powder, chat masala and red chili powder. You can use any plastic bag or milk packets if you do not have a piping bag. Adjust the chili as per taste, and if making for kids then omit it.
