Super easy to make, cauliflower floret which are boiled and coated, dipped in batter and coated with breadcrumbs and deep fried until golden brown and sprinkled with magical masala, crispy and crunchy from outside and juicy from inside. This is one of the quickest and easy snack or appetizer to make. So let’s begin.
INGREDIENTS:
- Water - 3 cup for boiling the cauliflower
- Cauliflower Floret - 1 cup boiled
- Panko Breadcrumbs - 1 cup as required for coating
- oil - as required for deep frying
For the coating
- Parsley - 1 tbsp or ½ tsp of Coriander or Oregano, chopped
- Garlic Powder - 1/2 tsp or ginger garlic paste
- Onion powder - 1/2 tsp
- Black Pepper - 1 tsp
- salt - 1 tsp
- Corn flour - 3 tbsp
- Maida - 3 tbsp
For the batter
- Maida - 4 tbsp
- Corn flour - 4 tbsp
- Soya sauce - 1 tsp
- yogurt - 2 tbsp
- salt - 1/2 tsp
- Water - as required for batter
For the masala
- Garlic Powder - 1/2 tsp optional
- salt - 1 tsp
- Onion powder - 1/2 tsp optional
- Red Chili Powder - 1 tsp
- Chat Masala - 1 tsp
- Powdered Sugar - 1 tsp
- Black Pepper - 1/2 tsp
RECIPE STEPS:
- Cut all the cauliflower florets into same size. Set aside
- In a large sauce pan, pour water and add the cauliflower florets. Over medium flame bring it to a boil and cook the cauliflower florets.
- Once done strain the cauliflower florets and then transfer it into a mixing bowl.
For the coating
- In a large mixing bowl combine cauliflower florets with chopped parsley, garlic powder, onion powder, black pepper, salt, corn flour and maida. Stir using your hands until all ingredients are combined. The cauliflower florets have to be well coated.
- Once done remove the cauliflower florets from the mixing bowl and keep them in a separate bowl.
For the batter
- In the same large mixing bowl add maida, corn flour, soya sauce, yogurt and salt. Mix everything until well combined.
- Add water little at a time to the mixture; keep stirring to form a lump free batter.
- Dip the cauliflower florets in the batter mixture and then coat it with panko breadcrumbs. Make sure the cauliflower florets are well coated. Once done set aside.
For the masala
- In another bowl combine garlic powder, salt, onion powder, red chili powder, chat masala, powdered sugar and black pepper. Give it a good stir and set aside.
For frying
- In a deep frying pan, heat the oil on medium flame. Add the coated cauliflower florets in batches.
- Deep fry them for 6-7 minutes or until they are light and crunchy. Follow the same procedure for the remaining gobi popcorn. Remove on a kitchen towel.
- Sprinkle the prepared magical masala and garnish with chopped parsley. Gobi Popcorns are ready.
serve
- Serve Gobi Popcorn with ketchup or mayonnaise.
RECIPE NOTES :
Notes: Do not skip black pepper as it’s a key ingredient. Fry the florets over medium flame only, over high flame it will brown fast and if low flame then the florets will be dry.
