INGREDIENTS:
For the batter
- Maida - 1/2 cup
- Corn flour - 1/2 cup
- Dahi - 3/4 tbsp
- salt - to taste
- Pepper - to taste
- turmeric powder - 1/2 tsp or ¼ tsp of yellow color
- Water - as required for the batter
- Paneer - 250 gms cut into 1 ½ - 2 inches long strips
- oil - to deep fry
For the tadka
- oil - 2 tbsp add 1 tbsp butter, if your like
- Cumin Seeds - 1/2 tbsp
- Red Chili - 2-3 small broken
- Curry Leaves - 4-5 small
- garlic - 4 tbsp finely chopped
- Capsicum - 1/4 cup chopped
- Green Chili - 3 small slit
- Onion - 1 small finely sliced
- Coriander Leaves - handful, chopped
- Mint leaves - handful, chopped
- salt - to taste
- Pepper - to taste
- Msg - 2 pinch
- Coriander Powder - 1/2 tsp
- Red Chili Powder - 1/2 tsp
For the sauce
- Dahi - 1/2 cup
- Yellow food color - 1 pinch
- Corn flour - 1 tsp
- Lemon Juice - 1 tsp
RECIPE STEPS:
For the batter and paneer
- In a large mixing bowl combine, maida, corn flour, dahi, salt, pepper and turmeric powder or yellow food color. Stir everything well.
- Add little water at a time to make a smooth batter, once done set aside.
- Add the paneer strip in the batter, and stir the paneer, until well coated.
- In a deep frying pan, heat the oil on high flame. Fry the paneer in batches. Deep fry them for 2- 3 minutes or until they are golden in colour. Follow the same procedure for the remaining paneer. Remove on a kitchen towel. Set aside.
For the tadka
- Heat a wok over high heat, pour oil in the wok starting from the sides.
- Add cumin seeds, red chili, curry leaves and garlic. Fry for 15-20 second on high flame. Stir using a metal flat spoon.
- Then add capsicum, onions and green chili cook everything for 1 minute.
- Add coriander leaves, mint leaves, salt and pepper, cook for 1 minute.
- Now add msg, coriander powder and chili powder, cook for 1 minute over medium flame.
For the sauce
- Next combine dahi, yellow food colour and corn flour and give it a good mix.
- Add the dahi mixture to the tadka and mix everything until well combined. Cook for 1 minute, stirring continuously.
- Finally add the lemon juice and some water, which was mixed in the same dahi bowl. Stir everything.
- Add the paneer strips to the sauce and ensure that all the paneer is coated well. Paneer Majestic is ready.
serve
- Sprinkle some fresh coriander and serve the Paneer Majestic along as a starter.
RECIPE NOTES :
Notes: Paneer majestic is known for its yellow colour, hence do not skip the turmeric powder or yellow food colour. Cumin seeds and coriander is a key ingredient in making the paneer majestic. If you do not add corn flour then the dahi will split. Adding corn flour makes the dish very creamy.
